Girls just wanna have fun

...and cupcakes!

Yesterday afternoon I had a lot of fun baking with my girlsfriends Anna, Romi, Karina, and Lovi.
We had a great "cupcakes baking session" hosted by the Home ♥ sweet ♥ Bakery (that is in my own kitchen).
Cherries ended up on the floor, icing on the wall, and dough all over the kitchen counter, nevertheless we were quite successful. We baked cherry-mascarpone, chocolate-nougat, and rose-butter cream cupcakes... so delicious!!! Everyone agreed ;)

Picky & crunchy!

I really like muesli and cereals with dried fruits, nuts, chocolate chips, and and and... and I especially like picking out of the carton the ones I like the most. I'm a bit picky! So for some kind of reason, after a couple of weeks, I'm not that fond of them anymore and the best way to use the leftovers is to use them to bake crunchy cookies!

What you need for 20 cookies:
250 gr. butter
170 gr. dark brown sugar
2 eggs
500 gr. flour
1 teaspoon of salt
1 teaspoon of baking powder
1/2 teaspoon of cinnamon
1-2 cups of cereals, oatmeal, raisins, etc

What to do:
Preheat the oven at 170° C.
Put the butter and the sugar in the mixer and beat until light and fluffy.
Then add one at a time the eggs.
Add the flour, salt, baking soda, cinnamon, cerals, and mix well.
Drop equal amounts of dough on the baking sheets and bake for about 12 minutes, or until golden.
Let them cool down before serving.

knock knock the Easter Bunny is here!

Yeeeeeyyyyyyyyy the Easter Bunny has finally arrived, he has made it through the snow, brought sunny weather, and... presents!

Look what I received:


We enjoyed the sun today, visited the Festung in Salzburg, and ate at Cafe' Bazar along the river Salzach. The weather was nice but not that warm, nevertheless the Easter Bunny (i.e. me!) was able to deliver at our house some lovely butter cookie-eggs with royal icing.
...He also delivered a very special self-made chocolate egg with a personalized surprise: a beautiful gold charm from my boyfriend...

AAA: Bunny lost in the snow

Cherry me up!

Easter is approaching... and I love it!
Let's just hope for the weather.
In case it rains I'm sharing this recipe to cheer or cherry us all up :D
I decided to use these really nice mini-gugelhupf-moulds I received from my sweet and youger brother Egon.




Ingredients:
350 gr. mascarpone
200 gr. sugar
1 spoon of vanillin
1 spoon of baking powder
250 gr. flour
1/4 glas of milk
cherries as many as you like (without stone)

What to do:
Beat in your mixer the mascarpone with the sugar and vanillin. When creamy add the flour and baking powder. If the dough is too rough add a sip of milk. When you get a smooth but not liquid consistency add the cherries and carefully stir with a spoon, otherwise you will squish the cherries.
Put the batter in the mould with some butter and flour and bake in the oven at 180°. If you make one big cake it will take about 40 minutes, if you make various smaller ones then only 20-25 minutes.

Serve with a sprinkle of confectioners' sugar and a fresh juice!

Cu♥re italiano: pizza muffins

I came up with this new and cool idea: pizza muffins! It's nothing else than pizza dough filled with whole cherry tomatoes, mozzarella, and basilico, baked in a muffin mould. They are great for parties or simply when you feel like having a special snack.


Since I gave you the pizza recipe on one of my previous posts (this one) you can try them out yourself! When they are ready just a bit of olive oil and some fresh basilico leaves will give the real Italian touch to the English-born muffins.
